Whole30 Eggless Breakfast Hash

My Whole30 eggless breakfast hash recipe has become quite popular with my IG friends, so I thought I would publish it here! I am not going to be posting recipes on the reg, but I will post fun things I come up with every now and then! I didn’t know what to call this so I just called it eggless since people are always like, “I’m so sick of eggs” during Whole30. You’re welcome. Definitely on my way to becoming a recipe developer with these naming skillz.

Ingredients:

• 1 lb grass fed ground beef (personally love Pre Brands)

• 4 strips of sugar-free bacon

• 1 medium sized Japanese sweet potato

• 1 apple

• 1 large Handful of Spinach

Spices:

• 1.5 tsp Salt (you can add more to taste)

• 2 tsp Garlic powder

• 3 tsp Cinnamon

Directions:

Step 1: Cut Japanese sweet potato and apple into half-inch sized cubes.

Step 2: In a pan, brown the ground beef with 1tsp salt, 2tsp garlic, and 2 tsp cinnamon. Once cooked, transfer the beef into a large cooking pot.

Step 3: In a pan, cook the 4 slices of bacon. Once cooked all the way through, transfer the bacon onto a plate to cool, and leave the bacon fat in the pan.

Step 4: In the same pan with the bacon fat, cook sweet potatoes over medium heat with remainder of the salt and cinnamon, for about 10 min.

Step 5: Transfer the cooked sweet potato and the uncooked apple slices to the large cooking pot with the ground beef. Crumble the bacon and add into mix.

Step 6: Set temperature for large cooking pot to medium-high heat, and add in the spinach. Continue to stir and cook until the spinach wilts.
